I’ll be honest, when I read that today’s Sunday Supper was going to be about using leftover Halloween candy, my heart kind of sank. You see, not that I avoid all kinds of candy, but I do try to limit them. Plus I do definitely avoid the crazy food colorings (my kids definitely have enough energy without them!). But then I reconsidered and wondered if I could do a semi-healthy take on the theme. These inside out caramel apple muffins are just that, and they are delicious as well.
The inspiration for these inside out caramel apple muffins
My sweet tooth has definitely become less as I’ve got older, not that it was ever as strong as many I know. I’m sure it helps now, if I’m honest, that I don’t really like many candies and chocolate in the US. I’m no doubt biased by what I grew up with, but I much prefer British and even more so Belgian and Swiss chocolate. Caramel, though, is definitely something I have a soft spot for, whatever it’s wrapped in. I’ve tried the odd cookies with eg rolos baked in, and decided it might be fun to put that into muffin form. Caramel and apple are such perfect pairings, so caramel apple muffins were a natural choice.
How they’re made
These inside out caramel apple muffins are really easy to make, as you simply mix together the wet ingredients, the dry ingredients then combine. You put a dollop of the batter in to each hole of a mini muffin tin, press a rolo in to each then cover with a bit more of the batter. You might find you have to press the rolo in a bit more as you cover them as they can pop up as the batter starts to expand. A short bake, and they’re ready for you to dive in.
Healthier swaps
While they have caramels in them, as I say these inside out caramel apple muffins are otherwise relatively healthy. I only started using whole wheat pastry flour recently for recipes such as the pumpkin cinnamon rolls I shared. I immediately wondered why I didn’t find and use it sooner. Admittedly, it wasn’t that obvious in the supermarket, but I have used it lots since. Anyway, these caramel apple muffins make use of that along with coconut oil rather than butter. There’s also very little sugar since the rolos and apple add enough sweetness.
I shared some of these caramel apple muffins with kids and teachers at my son’s preschool earlier this week. Needless to say, they all disappeared quickly. This includes by a kid that doesn’t normally eat apple (I didn’t tell her what was in them ) Easy to make, relatively healthy and delicious, they’re a great way to use some of the rolos you might gather on Halloween. Or just buy some to make these. It’s allowed.
- ½ cup/120ml unsweetened apple sauce (I had chunky homemade but smooth is fine too)
- 2tbsp coconut oil, melted then cooled
- 1 egg
- 2tbsp brown sugar
- 1 cup/120g wholewheat pastry flour
- 1tsp baking powder
- 1tsp cinnamon
- 12 rolos or similar chocolate-coated caramel
- Preheat oven to 350F/175C and lightly oil a mini muffin tin.
- Mix together the apple sauce, coconut oil, egg and brown sugar until well blended.
- In a separate, medium-sized bowl mix together the flour, baking powder and cinnamon. Add the apple sauce mixture and mix until well combined but try not to overmix.
- Put a spoonful of the mixture into the bottom of each muffin mould. Press a rolo into each one the spoon over a little more of the batter so that the rolos are covered. You might need to press them in again as they can pop up a little as the batter expands.
- Bake for approx 15min until lightly brown and cooked through.
